Yuzu

Yuzu (柚子) is a citrus fruit of East Asian origin with complex aromas of acidic lemon, bitter grapefruit and sweet tangerine. The fruit is particularly popular in Japan and Korea as a natural flavouring in food and drinks. Since the 18th century, yuzu essential oil has also traditionally been added to baths in Japan to celebrate the Winter solstice (Toji).

Sencha

Sencha is by far the most commonly cultivated and consumed green tea in Japan and constitutes the backbone of Japanese tea traditions. The leaves are typically steamed for 10–60 seconds, dried with hot air, churned, and via a multi-staged process rolled into flat needles. The flavour profile of sencha is very diverse and varies between sweet, fresh and grassy to robustly bitter. The region of cultivation as well as quality of the tea play a significant role in determining flavour.

Laboratory Tests

We go to great lengths to identify the finest organic tea farms across the world’s most celebrated terroirs. All our teas are sourced directly from the farmer and, with a few exceptions, are certified organic or come from pesticide-free farms. Each batch of tea for every harvest is tested for pesticides and other pollutants in an independent German lab to ensure they meet our strict quality standards as well as HACCP food safety requirements. Additionally, radioactivity levels are regularly monitored in all the regions of Japan from which we source our teas.

Cultivation & Processing

The tea field is situated in the midst of very high picturesque mountains. The tea plants are exposed to much beneficial fog as well as significant temperature fluctuations between day and night. An organic fertiliser made from rice bran is used to support the plants' growth. Only a few kilograms of this strong and expressive tea are produced each year. In addition to the Yabukita cultivar, the tea master chooses a special selection of rare and typical Kyushu seed varieties (Kanayamidori, Okumidori, Zairai) for this superior Sencha, which give the tea more umami and more expression.

Brewing

Steep 2 heaped tsp in 100–300ml water at 55–60°C for 2 min. Suitable for several infusions.

Packaging & Storage

Packed in a high-quality, airtight, resealable standing zipper pouch with 9 protective layers to preserve flavour and prevent oxidation. After opening, press out as much air as possible when snapping shut. Alternatively place tea leaves in a stylish Chazutsu tea caddy with double lid to keep them fresher for even longer.

Recommended Teapot

A traditional Japanese Kyusu teapot made from iron-rich Tokoname or Banko clay is perfect for green teas as they help to soften any astringency for a sweeter, mellower brew. Alternatively use a glass teapot with ample room for the leaves to unfurl as they steep.
