Tea Farm

Mr. Toshihiro Hirayanagi, the farmer at the Yamahira tea garden, pursues a philosophy that emphasises an innovative and comprehensive approach to tea cultivation, and describes tea as being "calming for the soul". In accordance with this philosophy, Mr. Hirayanagi has avoided the use of pesticides and chemical fertilisers since 2003, and as chairman of the Fuji-city Temomi Preservation Society and, since 2021, also of the nationwide Temomi Association, he is one of the best-known masters in the traditional art of tea rolling in the whole of Japan.

Flavour

This special tea gave us a truly spiritual experience during our tea tasting. The first pour presents a bouquet of perfectly balanced aroma in which one can become completely absorbed. This is one of the most harmonious teas we have tasted.

Although the taste is at first somewhat reserved, the robust notes of a true Shizuoka tea shine through. By the second pour, this Shizuoka character is perfectly complemented by delicate bitterness. Green, vegetal notes are the strongest in the third pour while the fourth pour returns to the mild, even shy character of the first, thus returning in taste to the beginning of the cycle.

Sencha

Sencha is by far the most commonly cultivated and consumed green tea in Japan and is the backbone of Japanese tea traditions. The leaves are typically steamed for 10-60 seconds, dried with hot air, churned, and via a multi-staged process rolled into flat needles. The flavour profile of sencha is very diverse and varies between sweet, fresh and grassy to robustly bitter. The region of cultivation and quality of the tea play a significant role in determining flavour.

Laboratory Tests

We go to great lengths to identify the finest organic tea farms across the world’s most celebrated terroirs. All our teas are sourced directly from the farmer and, with a few exceptions, are certified organic or come from pesticide-free farms. Each batch of tea for every harvest is tested for pesticides and other pollutants in an independent German lab to ensure they meet our strict quality standards as well as HACCP food safety requirements. Likewise, the regions of Japan from which we source our teas are tested for radioactivity for every harvest.

Cultivation & Processing

The tea farm is located in a valley by the Ashitaka Mountain, to the southwest of the famous Mount Fuji. This protected area provides the ideal climate for the tea plants to grow, with plenty of fog and an optimal provision of water to the soil from the Sudo river, which passes through the valley. The farm has been able to avoid using chemical fertilisers and pesticides since 2003 thanks to these optimal growing conditions and their innovative innovative cultivation practices. Instead, the farm utilises high-grade organic fertilisers such as kelp and buckwheat husks to optimise the quality of the soil and encourage the growth of healthy, nutrient-rich plants.

This tea is sourced exclusively from the tea plantation in the Sudo River Valley and is purchased directly from the farmer.

Preparation

Brewing Guide

3 heaped tsp per 100-300ml (60°C) water. Steep for 2 minutes. Suitable for up to 4 infusions.

Packaging

High-quality, airtight, resealable standing zipper pouch with 9 protective layers to preserve flavour and protect against oxidation and contamination. The tea is vacuum packaged according to the highest standards in Japan, with a small quantity of nitrogen added to the package to protect against oxidation.

Recommended Teapot

For this strongly umami tea, a high-quality violet banko kyusu with a fine ceramic strainer is recommended. Alternatively, a black Tokoname kyusu can be used – this does not have such an impact on the flavour of the tea, instead leaving the taste rather neutral, making it a great all-rounder for all types of green tea.

Recommended Storage

A high-quality tea caddy made of cherry bark (solid wood, Kabazaiku Chazutsu) is ideal, alternatively a cheaper, internally coated, air-tight tea caddy.
