Tea Farm

The tea farmer Kenichi Fujisako adheres to the highest organic standards, far exceeding those of the JAS system. The tea field has been pesticide-free since 1978, and the tea plants are grown in perfect symbiosis with the regional flora and fauna. Only smallest amount of fertiliser has been used on the tea farm since 2010. For processing, Mr. Fujisako relies on older machines of higher quality than most produced today. All these factors come together to create a delightful tea that is both rejuvenating and pleasant.

TAMARYOKUCHA

Tamaryokucha green tea, like Sencha, is gently steamed with water and twisted, not rolled, in large bamboo drums to give it the distinctive round Magatama shape. The taste is therefore similar to Sencha, and has an impressively round, full and mild aroma.

Laboratory Tests

We go to great lengths to identify the finest organic tea farms across the world’s most celebrated terroirs. All our teas are sourced directly from the farmer and, with a few exceptions, are certified organic or come from pesticide-free farms. Each batch of tea for every harvest is tested for pesticides and other pollutants in an independent German lab to ensure they meet our strict quality standards as well as HACCP food safety requirements. Likewise, all the regions of Japan from which we source our teas are tested for radioactivity for every harvest.

Cultivation & Processing

Tamaryokucha are steamed like sencha but not rolled into needles, and are distinctly less open. As a result, the leaves attain the so-called "magatama" form (勾玉) that resembles crooked commas. The tea farmer has developed a special steaming process for his tamaryokucha that is very short and under unusually high steam pressure (0.2 Pa). As a result of this steaming process, the teas acquire a particularly aromatic aftertaste, and have a clear yamabuki shade when seen inside a cup. The tea fields are located in a pristine natural environment. No pesticides or herbicides have been used since 1978.

Single Origin

This tea is sourced exclusively from the above-mentioned tea plantations in Ureshino and is purchased directly from the farmer.

Preparation

Brewing Guide

2 heaped tsp per 200-300ml (60°C) water. Steep for 2 minutes. For a stronger tea, increase water temperature. Suitable for several infusions.

Packaging

Packaged for us by the farmer in high-quality, airtight, resealable standing zipper pouches.

Recommended Teapot

An ideal teapot for this tea is an authentic tokoname kyusu made with black clay, which brings out the mild and aromatic character of the tamaryokucha. Black tokoname kyusu are considered suitable for almost all varieties of green tea.

Recommended Storage

A high-quality tea caddy made of cherry bark (solid wood, kabazaiku chazutsu) is ideal, though any airtight tea caddy with internal coating will suffice.

Test results

We find it very important that our teas are pure and produced in a way that respects the environment. For this reason, each one of our teas is tested for pesticide residues by an independent laboratory, the results of which can be found here.
