Tea Farm

The region of Ureshino in Japan is regarded as one of the best terroirs for cultivating tamaryokucha and kamairicha. This is where the family-operated tea farm of Ota Shigeki, now in its second generation, is located. Mr. Shigeki has produced many award-winning teas and in 2014 was the recipient of a prestigious Nihoncha Award. His teas are produced to an impressive standard and stand out for their natural character. The farm has refrained from the use of pesticides and herbicides since 1978.

The excellent terroir, expertise of the tea farmer, as well as refined cultivation and production methods come together to produce this impressive half-shaded tamaryokucha. The tea has a robust and deep character. The rare saemidori cultivar lends the tea a full-bodied, vegetal aroma reminiscent of leafy greens with a fruity touch of green apple.

Tamaryokucha

Tamaryokucha green tea, like Sencha, is gently steamed with water and twisted, not rolled, in large bamboo drums to give it the distinctive round Magatama shape. The taste is therefore similar to Sencha, and has an impressively round, full and mild aroma.

Laboratory Tests

We go to great lengths to identify the finest organic tea farms across the world’s most celebrated terroirs. All our teas are sourced directly from the farmer and, with a few exceptions, are certified organic or come from pesticide-free farms. Each batch of tea for every harvest is tested for pesticides and other pollutants in an independent German lab to ensure they meet our strict quality standards as well as HACCP food safety requirements. Likewise, the regions of Japan from which we source our teas are tested for radioactivity for every harvest.

Cultivation & Processing

The tea farmer selected a rare cultivar for this exquisite blend. Tamaryokucha are steamed like sencha but not rolled into needles, and are distinctly less open. As a result, the leaves attain the so-called "magatama" form (勾玉) that resembles crooked commas. The tea farmer has developed a special steaming process for his tamaryokucha that is very short and under unusually high steam pressure (0.2 Pa). As a result of this steaming process, the teas acquire a particularly aromatic aftertaste, and have a clear yamabuki shade when seen inside a cup. The tea fields are located in a pristine natural environment. No pesticides or herbicides have been used since 1978.

 

 

Preparation

Brewing Guide

2 heaped tsp per 100-300ml (60°C) water. Steep for 2 minutes. For a stronger tea, increase water temperature. Suitable for several infusions.

PACKAGING

Packaged for us by the farmer in high quality, airtight, resealable standing zipper pouches.

RECOMMENDED TEAPOT

An ideal teapot for this tea is an original tokoname kyusu made with black clay that can bring out the mild and aromatic character of the tamaryokucha. Black tokoname kyusu are considered to be good all-rounder kyusu for almost all varieties of green tea.

RECOMMENDED Storage

Ideally store in a quality tea caddy made from cherry tree bark (wooden, kabazaiku chazutsu) or an airtight, double-coated metal tin.

Test results

We find it very important that our teas are pure and produced in a way that respects the environment. For this reason, each one of our teas is tested for pesticide residues by an independent laboratory, the results of which can be found here.
