Stachys iva is one of the renowned Mediterranean mountain teas endemic to the mountains of the Balkan Peninsula (Bulgaria, Greece, Albania). Depending on the terroir, mountain, and altitude, the plant develops different compounds and aromas. Similar to Sideritis scardica, it is deeply rooted in Greek culture, to the extent that it is also commonly referred to as Greek mountain tea. For centuries, shepherds have been drinking this tea while traveling with their herds. Today, it is used as a healthy aromatic ingredient in Greek cuisine.
The harvest takes place in July when the plants have the highest polyphenol content. Harvesting is done entirely by hand using a sickle to ensure precise cuts and to avoid including weeds. Only the upper stems and full umbels are individually selected through hand-sickling. After harvesting, the remaining parts of the plants stay in the soil and regenerate naturally. Healthy plants can undergo this cycle multiple times.
After harvesting, the plants are dried in a dark storage room. The drying duration varies depending on the quantity and weather conditions. Typically, about 100kg of plants require approximately one day at 35°C, while larger quantities take two days. In very hot weather, the drying process is quicker. Once the plants are fully dried, they are collected and packaged.
