Tea Farm

Located in Zhejiang: a region known for its high-quality Chinese green teas, this farm has been certified organic for many years. Nestled in the mountains at altitudes of around 1200m above sea level, the fields are surrounded by dense woodland that helps to shield them from any airborne contaminants. The tea garden was originally founded and managed by Japanese farmers from 1993 until 2011. Now owned and run by Chinese farmers, the tea garden continues to specialise in Japanese-style green teas, thanks to the machinery and know-how that endures there to this day.

Wonderfully smooth and fresh, this Chinese Sencha is comparatively lighter, more mineral and less vegetal than typical Japanese Sencha. Perfect for frequent drinkers and newcomers to quality green teas.

Sencha

Sencha is a type of green tea from Japan and the most widely consumed tea there. After harvesting, the leaves are typically steamed for 10 to 60 seconds, dried with hot air, shaken and rolled into small flat needles. The flavour profile of Sencha ranges from sweet, fresh, and grassy to strong, tart and bitter, with the terroir playing a significant role. High quality Sencha are now also being produced in China and other locations following the same traditional Japanese processing methods, to produce new and interesting aromatic variations.

Laboratory Tests

We go to great lengths to identify the finest organic tea farms across the world’s most celebrated terroirs. All our teas are sourced directly from the farmer and, with a few exceptions, are certified organic or come from pesticide-free farms. Each batch of tea for every harvest is tested for pesticides and other pollutants in an independent German lab to ensure they meet our strict quality standards as well as HACCP food safety requirements.

Cultivation & Processing

What makes this Sencha really special is its Chinese origin of Zhejiang, as well as the Longjing cultivar that is also used to make the world-famous Long Jing or "Dragon Well" pan-fried green tea. After harvesting, the leaves are steamed as quickly as possible for a relatively brief 40 seconds, as per the Japanese Asamushi style. They are then dried, shaken and shaped to give them their typical needle form. Due to the cultivar and the somewhat late harvest by Chinese standards, the needles of this Sencha are much more robust and fleshy compared to Japanese Sencha, giving this tea a more settled and mild nature.

Preparation

Brewing

Steep 2 tsp (5g) in 300ml of water at 75°C for 2 minutes. Suitable for several infusions.

Storage

Packed in a high-quality, airtight, resealable standing zipper pouch with 9 protective layers to preserve flavour and prevent oxidation. After opening, press out as much air as possible when snapping shut. Alternatively place tea leaves in a stylish Chazutsu tea caddy with double lid to keep them fresher for even longer.

Recommended Teapot

A traditional Japanese Kyusu teapot made from Tokoname or Banko clay is perfect for green teas as the high iron content helps to soften any astringency for a sweet and mellow brew.
