Tea Farm

This tea farm, now in its third generation, is led by Yūhachirō Higuchi, a highly esteemed tea master and competition judge. Committed to strict organic cultivation, the farm operates with a deep respect for nature. Its remote and hard-to-reach location means only minimal machinery is used. The family also produces their own special organic fertilizer, based on a traditional recipe that has been carefully refined over the years.

Character

Tasting Notes

Due to its high stem content, this Karigane is exceptionally refreshing and easy to drink. The abundance of amino acids in the stems creates a pleasant and subtle umami (vegetal savouriness), beautifully balanced by a gentle sweetness. Its grassy freshness, delicate bitterness, and lower caffeine content – due to the high amount of stems – make this tea the perfect green tea for any time of day and every occasion.

Sencha Karigane

Karigane refers to fine green teas obtained from the higher-quality stems, leaf veins and small leaf portions of select senchas and gyokuros. It is naturally low in caffeine and rich in amino acids, the latter of which lend to its sweet, creamy character. Karigane is often called the "tea of tea farmers" because it is considered a bit of an insider secret that high-quality stem teas outshine basic and middle-rate senchas, gyokuros and hoijchas. The word Karigane itself means "wild goose" and originates from a traditional Western Japanese folktale. The story tells of a wild goose flying over vast expanses of water with a twig in its beak. When it grows tired, the goose places the twig on the water and rests upon it.

Each batch of tea for every harvest is tested for pesticides and other pollutants in an independent German lab to ensure they meet our strict quality standards as well as HACCP food safety requirements. Likewise, all the regions of Japan from which we source our teas are tested for radioactivity for every harvest.

Special features in location, cultivation and processing

The tea farm lies deep within the picturesque, remote mountains of Ukiha in Fukuoka, a region renowned for having some of the best water quality in Japan. To enhance their teas, the farm developed a unique deep steaming process designed to maximise depth and clarity of flavour while minimising astringency.

Brewing Guide

3 heaped tsp per 100-300ml, 60°C water. Steep for 2 minutes. Suitable for several infusions.

Packaging

In accordance with the highest packaging standards in Japan, this tea is packed and vacuum-sealed with a small amount of nitrogen in a high-quality, airtight, resealable zipper pouch with 9 protective layers that preserve flavour and prevent oxidation. After opening, press out as much air as possible when snapping shut. Alternatively place tea leaves in a stylish tea caddy.

Recommended Teapot

The ideal choice for this Sencha is a red Tokoname Kyusu with a fine ceramic filter. The special clay and oxidation firing process beautifully enhance the tea's delicate bitterness. Alternatively, a black Tokoname Kyusu serves as an excellent all-rounder, perfect for all types of green tea.

Test results

We find it very important that our teas are pure and produced in a way that respects the environment. For this reason, each one of our teas is tested for pesticide residues by an independent laboratory, the results of which can be found here.
