Tasting Notes

This particularly refined entry-level Sencha from Kagoshima and Miyazaki impresses with its harmonious balance of freshness, flavour, and a pleasant mildness, interspersed with rich, bitter compounds and catechins. For an autumn harvest, this tea is remarkably well-balanced and potent in its effects. Thanks in part to its brief steaming process, it delivers an especially natural and smooth organic Sencha, perfect for daily enjoyment.

Sencha

Sencha is by far the most commonly cultivated and consumed green tea in Japan and constitutes the backbone of Japanese tea traditions. The leaves are typically steamed for 10–60 seconds, dried with hot air, agitated, and via a multi-staged process rolled into flat needles. The flavour profile of Sencha is very diverse and varies between sweet, fresh and grassy to robustly bitter. The region of cultivation as well as quality of the tea play a significant role in determining flavour.

Laboratory Tests

We go to great lengths to identify the finest organic tea farms across the world’s most celebrated terroirs. All our teas are sourced directly from the farmer and, with a few exceptions, are certified organic or come from pesticide-free farms. Each batch of tea for every harvest is tested for pesticides and other pollutants in an independent German lab to ensure they meet our strict quality standards as well as HACCP food safety requirements. Likewise, all the regions of Japan from which we source our teas are tested for radioactivity for every harvest.

Special features in location, cultivation and processing

This tea farm is located in picturesque Miyazaki. Thanks to their firm commitment to and belief in safe and pure teas, they have successfully transitioned to an organic cultivation method that works in harmony with nature. In the early years, they faced severe insect infestations and disease outbreaks in their tea plants. It took several years and a great deal of creativity to finally discover a way to cultivate healthy, robust plants without harming the environment. This passion is beautifully reflected in the farm's high-quality, flavourful teas.

This tea is exclusively sourced from the above mentioned tea farms in Kagoshima and Miyazaki. Sourced directly from the tea farmer.

Preparation

2 heaped tsp per 100-300ml (60°C) water. Steep for 2 minutes. Suitable for several infusions.

Packaging

Packed in a high-quality, airtight, resealable zipper pouch with nine protective layers to preserve flavour and prevent oxidation. After opening, press out as much air as possible when snapping shut.

Recommended Teapot

The ideal choice for this Sencha is a red Tokoname Kyusu with a fine ceramic filter. The special clay and oxidation firing process beautifully enhance the tea's delicate bitterness. Alternatively, a black Tokoname Kyusu serves as an excellent all-rounder, perfect for all types of green tea.

Recommended Storage

Ideal is a premium tea caddy made from cherry bark (solid wood, Kabazaiku Chazutsu). Alternatively, a more affordable, coated, airtight tea caddy can be used.
