A rare top quality organic aged Bai Mu Dan white tea from the highlands of Yunnan, hand-picked in 2021 and specially pressed for us into a traditional tea cake. Grown at an impressive altitude of over 1800m, this tea is made from the aromatic first harvest of the year and contains a particularly large proportion of buds. Wonderfully fruity, full-bodied and creamy, suitable for immediate enjoyment as well as further aging.

We source this fine tea directly from a collective of regional tea farmers in the highlands of Yunnan, located at an impressive 1800m above sea level. The tea farm attained all major international organic certifications in 2014.

This exciting Bai Mu Dan made of top quality, hand-picked buds and leaves has a unique aromatic profile that leads with buttery vanilla notes, complemented by fine, fruity nuances of peach and lemon balm. What's more it is wonderfully creamy, slightly mineral and leaves a delicate, velvety feel on the tongue – typical of premium white teas.

As a traditionally pressed tea cake, it is perfect for further aging to enhance the fruitiness, body and intensity. Since the cake is suitable for both immediate enjoyment and additional aging, we can highly recommend having one cake for now, and one for the future.

White Tea

White tea is typically made from specific cultivars of Camellia sinensis and is the least processed type of tea, with the lowest degree of oxidation. Due to the minimal yet lengthy production process of pre-drying and withering in the open air, it has a very high content of natural tea compounds. Markers of quality in high-grade white tea include a high proportion of aromatic leaf buds and a lightly coloured cup. Elegant and delicate, white teas tend to be subtly sweet with nuances of vanilla and a velvety texture.

Laboratory Tests

We go to great lengths to identify the finest organic tea farms across the world’s most celebrated terroirs. All our teas are sourced directly from the farmer and, with a few exceptions, are certified organic or come from pesticide-free farms. Each batch of tea for every harvest is tested for pesticides and other pollutants in an independent German lab to ensure they meet our strict quality standards as well as HACCP food safety requirements.

Cultivation & Processing

The highlands of Yunnan have a mild, subtropical climate even at great heights, thanks to the mostly south-facing slopes, where the climatic conditions are strongly influenced by the Indian and Pacific Oceans.

The tea fields themselves are located in a very beautiful, mountainous terrain 1800m above sea level, which helps to slow down growth to produce particularly aromatic tea besides keeping pests at bay. Insects with an affinity for tea leaves cannot reach such great heights, allowing the farmers to completely forego the use of pesticides, to produce a particularly natural, organic tea with an excellent taste and fragrance.

Buds and leaves are selected by hand from the precious first harvest of the year, which are then withered for up to three days. As the air is very thin at such altitudes, the leaves oxidise very slowly to develop an incredibly delicate flavour profile, reminiscent of the finest highland Darjeeling teas.

Preparation

Brewing

Break off 5g (about 2 tsp) of the tea cake to steep in 250–300ml of water at 85–90°C for 2–3 minutes.

To prepare traditionally in a small teapot or Gaiwan, we recommend steeping 7g in 100–200ml water at 90–95°C for one minute.

Suitable for several infusions, increase the steep time with each subsequent brew.

Packaging & Storage

Traditionally wrapped in fine, breathable rice paper. Store in original packaging, or break into pieces and place in a tea caddy in a cool, dry place away from strong odours.

Recommended Teapot

We recommend brewing this tea in a tall glass teapot with ample room for the leaves to unfurl as they steep. For a more traditional brewing style, use a small ceramic teapot or a Gaiwan.
