Tea Farm

The tea farm is located in the highlands of Lishan, a tea-growing region in Taiwan known for its high-quality tea. The tea fields are located at an altitude of up to 2000 metres, far away from cities and drenched in sunlight. Natural mountain spring water from the Xue Ba National Park (雪霸國家公園) irrigates the soil, and the idyllic surroundings have the ideal temperature difference between day and night for tea cultivation. As the first tea garden on Lishan to be certified for their organically grown tea, they attach great importance to growing their teas as naturally as possible, without the use of pesticides.

Tasting Notes

The fragrance of the warmed leaves captivates not only with its fine hazelnut note, but above all how incomparably delicate, graceful and unobtrusive it presents itself. The scent of the wet leaves instantly transports one to the subtropical highlands of Taiwan, surrounded by banana and pineapple plantations and vast tropical forests. Aromatically, the tea sits perfectly between green-raw and dark-roasted oolong. It reveals a complex interplay of fruity notes, especially yellow fruits, along with subtly caramelized nutty-roasted undertones. Similar to the fragrance of the leaves, it is the elegant restraint and the harmonious balance of all aromas that define this tea as a true masterpiece of oolong craftsmanship – one that can only be described as "superior". An oolong that seamlessly blends the freshness of the heavens with the depth of the earth, where Yin and Yang exist in perfect harmony.

OOLONG TEA

Oolong ("black snake" in Chinese) is characterised by an oxidation level that falls between green and black tea, making it a semi-oxidised tea. It can be broadly categorised into lightly oxidised (10-29%), medium oxidised (30-60%), and highly oxidised varieties (up to 70%). Many oolongs acquire an additional distinctive flavour through a delicate roasting process applied after oxidation. This, along with diverse terroirs and various processing intensities, results in an exceptionally diverse range of oolong teas. Taiwan and the southern region of China, particularly around Fujian province, are widely regarded as the finest terroirs for oolong.

Laboratory Tests

We go to great lengths to identify the finest organic tea farms across the world’s most celebrated terroirs. All our teas are sourced directly from the farmer and, with a few exceptions, are certified organic or come from pesticide-free farms. Each batch of tea for every harvest is tested for pesticides and other pollutants in an independent German lab to ensure they meet our strict quality standards as well as HACCP food safety requirements. Likewise, all the regions of Japan from which we source our teas are tested for radioactivity for every harvest.

Special features in location, cultivation and processing

Taiwan’s Li Shan ("Pear Mountain") is not only one of the finest tea-growing regions in the country due to its alpine terroir, but also captivates with its scenic diversity. The seasons transform Li Shan throughout the year: spring adorns it with vibrant wildflower meadows, winter blankets it in deep snow, and summer brings extensive orchards of highland fruits, including apples and the pears that give the mountain its name. Many of the tea plantations today are rooted in the nutrient-rich soil of former pear orchards, which once covered the slopes but have been increasingly replaced by tea cultivation in recent decades. The high-altitude climate, with its significant temperature fluctuations and cool, humid air, slows plant growth and enhances the delicate texture of the leaves – two key factors that contribute to the prized fruity-floral aroma of Li Shan tea.

Preparation

Brewing Guide

2 rounded teaspoons per 200-300ml water, 85°C, steep for 3-5 min. For Gongfu-style preparation using a Gaiwan or a Chinese teapot, we recommend a temperature of 90-95°C and a steeping time of 30-40 seconds. Suitable for multiple infusions.

Packaging

Packed in a high-quality, airtight, resealable zipper pouch with nine protective layers to preserve flavour and prevent oxidation. After opening, press out as much air as possible when snapping shut.

Recommended Tea Pot

Oolong tea is traditionally prepared in a Gaiwan (smaller quantities) or a tall glass teapot with an integrated strainer, allowing the tea to steep freely. For an especially aromatic preparation, a Yixing teapot made of natural clay is recommended.

Recommended Storage

Ideal is a high-quality tea caddy made from cherry tree bark (solid wood, Kabazaiku Chazutsu). Alternatively, a more affordable, internally-coated airtight tea caddy is another great choice.

Test results

We find it very important that our teas are pure and produced in a way that respects the environment. For this reason, each one of our teas is tested for pesticide residues by an independent laboratory, the results of which can be found here.
