Tea Farm

The tea farm is located the highlands of Lishan, one of Taiwan’s most renowned regions for top-quality tea. Situated at altitudes of up to 2000 metres, the fields are far removed from urban areas and bathed in abundant sunlight. Pure mountain spring water from Xue Ba National Park (雪霸國家公園) nourishes the soil, while the idyllic natural surroundings maintain a balanced temperature between day and night, providing ideal conditions for tea cultivation. Recognised as the first certified organic tea garden in Lishan, the farm is deeply committed to sustainable practices, ensuring its teas are grown as naturally as possible and entirely free from pesticides.

Tasting Notes

A complex triad of nutty, chocolatey, and floral-fruity notes from the warmed dry leaves hint at the quality of this premium black tea, setting a high standard for the infusion to follow. From its exquisitely delicate mouthfeel, to its sophisticated complexity and the breathtaking harmony of its aromas, this tea exceeds even the highest expectations of a top-tier black tea. While the initial scent of the leaves evokes dried stone fruit, the infusion reveals clear berry notes of currant and gooseberry that linger on the palate for minutes. Undoubtedly one of the finest Chinese-Taiwanese black teas to be found.

Black Tea

Black tea is the most oxidised form of tea. In contrast to green tea, the oxidation of the leaves after harvest and withering is not stopped with heat, but is instead encouraged by intensive rolling of the leaves, which breaks open cell walls and exposes the enzymes responsible for oxidation. These enzymes then react with oxygen in the air to form dark-colored compounds called flavonoids, causing the leaves to transition from green to black while developing their flavor and aroma. Black tea originates from China, where it is called Hong Cha, literally "red tea", after the glowing red-orange colour of the brew. The flavour of black teas vary considerably from light, sweet and fruity, to strong, malty and smoky, depending on where they are grown and the level of oxidation they undergo.

We go to great lengths to identify the finest organic tea farms across the world’s most celebrated terroirs. All our teas are sourced directly from the farmer and, with a few exceptions, are certified organic or come from pesticide-free farms. Each batch of tea for every harvest is tested for pesticides and other pollutants in an independent German lab to ensure they meet our strict quality standards as well as HACCP food safety requirements.

Cultivation & Processing

Taiwan’s Li Shan ("Pear Mountain") is not only one of the finest tea-growing regions in the country due to its alpine terroir, but also captivates with its scenic diversity. The seasons transform Li Shan throughout the year: spring adorns it with vibrant wildflower meadows, winter blankets it in deep snow, and summer brings extensive orchards of highland fruits, including apples and the pears that give the mountain its name. Many of the tea plantations today are rooted in the nutrient-rich soil of former pear orchards, which once covered the slopes but have been increasingly replaced by tea cultivation in recent decades. The high-altitude climate, with its significant temperature fluctuations and cool, humid air, slows plant growth and enhances the delicate texture of the leaves – two key factors that contribute to the prized fruity-floral aroma of Li Shan tea.

Preparation

Brewing Guide

2 heaped tsp per 200-300ml, 85-90°C water. Steep for 1-2 minutes. Suitable for multiple infusions.

Packaging

Packed in a high-quality, airtight, resealable zipper pouch with nine protective layers to preserve flavour and prevent oxidation. After opening, press out as much air as possible when snapping shut.

Recommended Tea Pot

For an especially aromatic preparation, we recommend using a Chinese teapot made of Yixing natural clay. Alternatively, a classic Gaiwan is an excellent option.

Recommended Storage

Ideal and particularly beautiful are authentic Chinese containers made of porcelain or clay. Alternatively, more affordable, internally coated airtight tea caddies are also suitable.

Test results

We find it very important that our teas are pure and produced in a way that respects the environment. For this reason, each one of our teas is tested for pesticide residues by an independent laboratory, the results of which can be found here.
