A top quality Huang Ya Yellow Tea from the legendary Huo Shan mountains in Anhui, cultivated without pesticides at an award-winning farm specialising in this incredibly rare and exclusive Chinese tea. Masterfully processed and only slightly fermented, this tea has a very delicate, dewy character with vegetal notes of asparagus and white cabbage as well as a fine vanilla.

Tea Farm

Across three generations, this family-run farm has been producing top-class yellow teas that have won numerous awards over the years. Particularly noteworthy is their commitment to cultivating tea without chemical pesticides and only harvesting once a year between April and the end of May. This allows the plants ample time to recover, which not only means they live significantly longer but the more mature they get, the higher the quality of their leaves.

Like crystalline droplets of dew, this yellow tea is extremely fine and delicate, with vegetal notes of white cabbage and nori seaweed topped with hints of asparagus and a fine vanilla. A very elegant yellow tea for connoisseurs.

As a producer of some of the finest yellow teas in the entire Huo Shan region, the farm has won the Gold Award at the annual Huo Shan Yellow Tea Contest several times for a number of their teas.

Yellow Tea

Chinese yellow tea or Huang Cha (黄茶) is a very rare, exclusive tea that is known for its complex processing method and delicate aromas. The name comes from the slightly yellow colour of the brewed tea. It is processed in a similar way to green tea but with an extra step where the dried and rolled leaves are encased in cloth so that they start to ferment. This gives the tea its characteristic colour besides a deeper, juicier flavour than its green tea cousin.

All our teas are sourced directly from the farmer and, with a few exceptions, are certified organic or come from pesticide-free farms. Each batch of tea for every harvest is tested for pesticides and other pollutants in an independent German lab to ensure they meet our strict quality standards as well as HACCP food safety requirements.

Cultivation & Processing

The tea farm is located at an altitude of 500-600m on a hill in the centre of the legendary Huo Shan Mountains in the western corner of China. This majestic mountain range is well-known for its steep, picturesque cliffs and a series of elevations – some of which rise to a height of 2155m – connected by ingeniously constructed mountain trails. Along these paths one discovers monasteries, pagodas, temples, bridges and impressive gates.

Yellow tea processing is distinguished from green tea by a step known as Men Huan (悶黃) literally "yellow sealing". After a short withering period post-harvest, the tender buds and leaves are heated over an open flame in a pan, then rolled, roasted and wrapped in a special cloth. This process of roasting and wrapping is repeated several times, allowing the tea to ferment gently, before they are finally dried carefully over charcoal. Due to this elaborate processing method that requires extensive monitoring to ensure the perfect degree of fermentation, yellow tea is extremely rare and exclusive.

This tea is sourced directly from one tea farm in the Huo Shan mountains in China.

Preparation

Brewing

In a larger teapot, we recommend steeping 2 tsp (5g) in 250ml of water at 80-85°C for roughly 2 minutes. Please pay extra attention to the water temperature: too low then the tea will be too mild, too hot and the taste becomes harsh.

To prepare traditionally in a small teapot or Gaiwan, steep 3 tsp (5–7g) in 100–200ml water at 85°C for one minute. Suitable for several infusions, increase the steep time with each subsequent brew.

Packaging & Storage

Packed in a high-quality, airtight, resealable standing zipper pouch with 9 protective layers to preserve flavour and prevent oxidation. After opening, press out as much air as possible when snapping shut. Alternatively place tea leaves in a stylish Chazutsu tea caddy with double lid to keep them fresher for even longer.

Recommended Teapot

We recommend brewing this tea in a tall glass teapot with ample room for the leaves to unfurl as they steep. For a more traditional brewing style, use a small ceramic teapot or Gaiwan.

Test results

We find it very important that our teas are pure and produced in a way that respects the environment. For this reason, each one of our teas is tested for pesticide residues by an independent laboratory, the results of which can be found here.
