Tea Farm

The tea farm is located at high elevation in Xinyi Township in Nantou at the foot of the highest peak in Taiwan, the Yushan (Jade Mountain), not far removed from the Yushan National Park. The area, which is predominantly populated by the indigenous Bunun minority, is secluded and not affected by industrial pollution. The tea is traditionally cultivated with only the addition of natural fertiliser. The farm does not use any chemical pesticides.

Dong Ding Oolongs are among the most popular oolongs in the world. This super premium tea is directly sourced from Xinyi Township at the foot of the Dong Ding Mountain; it is only medium fermented and medium roasted.

The stronger roast yields a more warming character with spicy aromas of cinnamon and walnut. The tea is mouth watering and appetising. The mineral quality of the tea is thirst-quenching and suitable as an iced tea. The vanilla intensifies in the second infusion, becoming both more buttery and a touch sweeter.

Oolong

Oolong ("black dragon" in Chinese) is characterised by an oxidation level that falls between green and black tea, making it a semi-oxidised tea. It can be broadly categorised into lightly oxidised (10-29%), medium oxidised (30-60%), and highly oxidised varieties (up to 70%). Many Oolongs acquire an additional distinctive flavour through a delicate roasting process applied after oxidation. This, along with diverse terroirs and various processing intensities, results in an exceptionally diverse range of Oolong teas. Taiwan and the southern region of China, particularly around Fujian province, are widely regarded as the finest terroirs for Oolong.

Cultivation & Processing

With up to 800m elevation, Dong Ding Oolong does not count among the High Mountain teas. The climate, however, is excellent for the cultivation of high-quality oolong: extensive sun in the morning, fog in the afternoon, and a lot of wind.

The cultivars qin xing or four seasons are typically used for good Dong Ding oolongs.

For oolong teas, typically the bud and first three leaves are harvested by hand. These leaves are typically allowed to grow a bit larger than other teas such as green tea. After harvest the leaves are set out to wither in the sun, which begins the oxidation and fermentation processes as the leaves dry. Thereafter the leaves are brought indoors to continue withering where they are repeatedly moved about. Small tears in the leaves, especially at the edges, allow juice from the leaves to seep out and oxidise.

During the next stage the leaves are laid out on either bamboo plates or large nets and placed in a fermentation chamber. The leaves are monitored until the tears in the leaves turn reddish-brown as a marker of fermentation.

Once the desired degree of fermentation has been reached, further oxidation and fermentation are halted with heat in an oven (kill green). Thereafter the leaves are broken up in a rolling machine so that the remaining leaf juice comes out and coats the outside of the leaves. The tea is then rolled, partially by hand and partially by machine (Ball Cloth Rolling, Baorou 包揉), to attain its characteristic half-rolled form. In the last stage the tea is placed in the oven to roast.

Brewing Guide

2 heaped tsp per 200-300ml (80°C) water. Steep for 2-3 minutes.

The tea farmer's recommendation:  85°C, 3-4 min.

Recommended Teapot

Oolong tea is traditionally brewed in a gaiwan (in small quantities) or a tall glass teapot with an integrated sieve so that the leaves are able to freely drift around inside the pot. For an especially aromatic infusion, we recommend a yixing teapot made from light-coloured clay.

Recommended Storage

Ideally store in a quality tea caddy made from cherry tree bark (wooden, kabazaiku chazutsu) or an airtight, double-coated metal tin.
