Tea Farm

Fundamental to the philosophy of Mr Toshihiro Hirayanagi, owner of the Yamahira En farm, is that tea is “soothing for the soul.” He therefore takes an innovative and holistic approach to tea cultivation, and has eschewed the use of chemical pesticides and fertilisers since 2003. As chairman of the Fuji City Temomi Preservation Society, he is also one of the most well-known masters in the traditional art of hand-rolled tea in all of Japan.

Flavour

With a peak value of 350mg GABA - the highest value we have ever measured - this tea is the most highly potent of our GABA teas, leaving nothing to be desired in terms of flavour. Strong buttery notes typical of GABA with a fine sweetness and subtle acidity harmonise excellently with the slightly bitter, spinachy green flavours of the tea, which is why the association with buttered spinach interspersed with fine nutmeg notes inevitably arises. In the background, slightly hay-like herbal notes give the tea an aromatic complexity that, in our eyes, predestines it for the highest grade of tea. All in all, a gourmet GABA in a class of its own, from certified organic cultivation by the well-known green tea luminary Toshihiro Hirayanagi.

GABA Tea

GABA tea is a functional tea developed in Japan which has high levels of the amino acid GABA due to its special processing. GABA is the most important inhibitory neurotransmitter in the central nervous system and is involved in significant processes in the body, especially in the reduction of nerve irritation, stress management, mood, growth hormones (muscle formation), fat loss and the regulation of blood pressure. In addition, GABA tea also contains all of the other important ingredients of regular green tea, such as catechins, in similar amounts. GABA teas are appreciated by connoisseurs for their buttery, smooth taste.

Laboratory Tests

We go to great lengths to identify the finest organic tea farms across the world’s most celebrated terroirs. All our teas are sourced directly from the farmer and, with a few exceptions, are certified organic or come from pesticide-free farms. Each batch of tea for every harvest is tested for pesticides and other pollutants in an independent German lab to ensure they meet our strict quality standards as well as HACCP food safety requirements. Likewise, the regions of Japan from which we source our teas are tested for radioactivity for every harvest.

Cultivation & Processing

The tea farm is located in a valley by the Ashitaka Mountain, to the southwest of the famous Mount Fuji. This protected area provides the ideal climate for the tea plants to grow, with plenty of fog and an optimal provision of water to the soil from the Sudo river, which passes through the valley. The farm has been able to avoid using chemical fertilisers and pesticides since 2003 thanks to these optimal growing conditions and their innovative farming practices. Instead, the farm utilises high-grade organic fertilisers such as kelp and buckwheat husks to optimise the quality of the soil and encourage the growth of healthy, nutrient-rich plants.

Preparation

Brewing Guide

Steep 2 heaped tsp in 200-300ml of 70°C water for 30 seconds for a mild, relaxing brew, and up to 3 minutes for a strong, stimulating tea.

Packaging & Storage

Packed in a high-quality, airtight, resealable standing zipper pouch with nine protective layers to preserve flavour and prevent oxidation. After opening, press out as much air as possible when snapping shut. Alternatively place tea leaves in a stylish tea caddy.

Test results

We find it very important that our teas are pure and produced in a way that respects the environment. For this reason, each one of our teas is tested for pesticide residues by an independent laboratory, the results of which can be found here.
