Laboratory Tests

We go to great lengths to identify the finest organic tea farms across the world’s most celebrated terroirs. All our teas are sourced directly from the farmer and, with a few exceptions, are certified organic or come from pesticide-free farms. Each batch of tea for every harvest is tested for pesticides and other pollutants in an independent German lab to ensure they meet our strict quality standards as well as HACCP food safety requirements. Likewise, the regions of Japan from which we source our teas are tested for radioactivity for every harvest.

Cultivation & Processing

The tea farm is located in a valley by the Ashitaka Mountain, to the southwest of the famous Mount Fuji. This protected area provides the ideal climate for the tea plants to grow, with plenty of fog and an optimal provision of water to the soil from the Sudo river, which passes through the valley. The farm has been able to avoid using chemical fertilisers and pesticides since 2003 thanks to these optimal growing conditions and their innovative innovative cultivation practices. Instead, the farm utilises high-grade organic fertilisers such as kelp and buckwheat husks to optimise the quality of the soil and encourage the growth of healthy, nutrient-rich plants.

This tea is sourced exclusively from the tea plantation in the Sudo River Valley and is purchased directly from the farmer.

Brewing Guide

2 heaped tsp per 200-300ml (70°C) water.

For a mild, relaxing tea: steep for 30 seconds
For a strong, stimulating tea: steep for 3 minutes

Packaged for us by the farmer in high quality, airtight, resealable standing zipper pouches.

Recommended Teapot

For this tea a Banko kyusu made from 100% violet original Banko clay is ideal. When fired, this famous clay brings out the tea's flavour, amino acids, chlorophyll and other special ingredients, in the very best way. Vintage kyusus from before 1990 could still be made from 100% original clay from the Banko region. Otherwise, a high-quality shiboridashi, a handleless teapot popular among green tea lovers, is suitable for intensive umami infusions.

Recommended Storage

For keeping this tea fresh, a tea caddy made from cherry tree bark (solid wood, kabazaiku chazutsu), an airtight, laquered tea caddy or an elegant, handcrafted metal Kaikado tea caddy are ideal storage solutions.

The purity of our tea is important to us. This is why we have both our raw ingredients as well as our finished products tested by independent laboratories to confirm purity and active ingredient content. Here, we have provided the results of some of the tests carried out on this product.
