Kinezuka Tea Garden

The Kinezuka Tea Garden is located in the idyllic mountains above Fujieda, near the town of Nakayama. The tea garden is renowned for its exemplary as well as exceptionally stringent adherence to natural and organic cultivation. Their methods include the avoidance even of pesticides which are permitted according to the Japanese JAS organic standards. While we source our teas directly from Mr. Kinezuka's farm, the region boasts other reputable JAS organic teas, in part as a result of the cooperative that Mr. Kinezuka founded in 1976 with other tea farmers from the Fujieda region. This cooperative is committed to the cultivation of the finest organic teas, and there are currently at least 26 farms in Fujieda that have joined. These farmers not only work together to improve their organic cultivation methods, but to further an integrated regional organic system under the name "Human, Agriculture, Nature". In addition to especially expressive teas from sencha, kabusecha and bancha, to hojicha and black teas, these farmers also grow excellent organic rice, fruits and vegetables, and mikan (Japanese mandarins).

GABA Tea

GABA teas were developed in Japan as a functional tea: due to the production method, the leaves synthesise a high concentration of GABA. GABA is the most important chemical messenger in the central nervous system and is involved in significant processes within the body, acting as an inhibitory neurotransmitter. Additionally, GABA tea contains the valuable compounds commonly associated with green teas, including catechins. GABA teas are beloved by tea connoisseurs for their smooth and buttery taste.

Laboratory Tests

We go to great lengths to identify the finest organic tea farms across the world’s most celebrated terroirs. All our teas are sourced directly from the farmer and, with a few exceptions, are certified organic or come from pesticide-free farms. Each batch of tea for every harvest is tested for pesticides and other pollutants in an independent German lab to ensure they meet our strict quality standards as well as HACCP food safety requirements. Likewise, the regions of Japan from which we source our teas are tested for radioactivity for every harvest.

GABA Content

The tea farmer ensures that a high amount of GABA is reached through carefully selecting the leaves, as well as through the unique production process.

GABA, an Important Amino Acid

The natural amino acid GABA (γ-aminobutyric acid) is the most important chemical messenger in the central nervous system, acting as an inhibitory neurotransmitter.

GABA is found in varying amounts in certain foods and is also formed in the brain from glutamine. GABA green teas (up to 400mg/100g), tomatoes (up to about 60mg), sprouted rice, certain fermented foods, potatoes (16–60mg) and citrus fruits (10–23mg) contain particularly high amounts of this amino acid.

Cultivation & Processing

The production of a delicious GABA tea is truly a form of art. The Kinezuka tea farm succeeds like no other in producing a nutrient-rich tea with not only a high GABA concentration of over 300mg per 100g but also a delightful buttery aroma. Moreover, Kinezuka produces this high-quality tea in accordance with strict organic standards. Its founder, Toshiaki Kinezuka, credits the smooth, balanced flavour of the tea to his natural cultivation methods; he believes that it is not just the quality of the leaves that make a superior tasting tea but also the quality of the soil. In line with this philosophy, the Kinezuka family has conscientiously tended to its land and kept it in harmony with nature for decades. The tea's aroma and deeply relaxing character can be directly credited to the Kinezuka family's unique and holistic approach, which considers everything from harvesting methods to the natural environment of the terroir itself, located in Steonoya in Shizouka.

Single Origin

This tea is sourced exclusively from the above-mentioned tea plantation in Fujieda and is purchased directly from the farmer, Mr. Kinezuka.

Brewing Guide

2 heaped teaspoons per 200–300ml water (70°C).

For a mild, relaxing tea: steep for 30 seconds
For a strong, stimulating tea: steep for 3 minutes

Packaging

Packaged for us by the farmer in high-quality, airtight, resealable standing zipper pouches.

Recommended Teapot

The ideal teapot for GABA tea is a banko kyusu made from violet clay with a fine ceramic sieve. This type of clay teapot best brings out the umami flavour while reducing the bitterness of the tea. Alternatively, we recommend using a black tokoname kyusu due to its suitability for preparing all types of green tea.

Recommended Storage

A high-quality tea caddy made of cherry bark (solid wood, kabazaiku chazutsu) is ideal, though any airtight tea caddy with internal coating will suffice.

Test results

The purity of our formulas is important to us. This is why we have both our raw ingredients as well as our finished products extensively tested by independent laboratories to confirm purity and active ingredient content.
