Character & Aroma

Tasting Notes

The name "Butterfly Pea" perfectly captures the essence of this exotic floral tea: as illustrious as a sapphire-blue butterfly, with intriguing tasting notes of freshly cooked edamame and fried sweet potato. More than just a visual spectacle, it offers an exciting alternative to classic tea in its flavour. It also has a colour-changing effect, shifting to vibrant purple when combined with an acidic element such as lemon juice, making it particularly well-suited for chilled, eye-catching cocktails. Because of its striking hue, it serves as a natural dye for culinary creations such as rice, noodles, and other dishes.

Butterfly Pea

Butterfly Pea is the most well-known name for the Southeast Asian plant Clitoria ternatea, a name referring to its vivid blue flowers and its place in the legume family. In recent years, it has gained global popularity as an herbal tea with an alluring azure infusion. One of its most fascinating features is its natural ability to change colour – when an acidic ingredient like lemon juice is added, the tea transforms from blue to a vibrant purple due to the presence of anthocyanins. The high anthocyanin content also gives the infusion a strong antioxidant power. Beyond its use as a tea, Butterfly Pea can be used as a natural colourant to tint rice, pasta, and beverages such as cocktails, for a real eye-catcher on the dining table.

Laboratory Tests

We go to great lengths to identify the finest organic tea farms across the world’s most celebrated terroirs. All our teas are sourced directly from the farmer and, with a few exceptions, are certified organic or come from pesticide-free farms. Each batch of tea for every harvest is tested for pesticides and other pollutants in an independent German lab to ensure they meet our strict quality standards as well as HACCP food safety requirements.

Located in the picturesque province of Guangxi, China, this farm is nestled in rolling hills up to 800 meters above sea level and is known for its exquisite Butterfly Pea tea. Secluded from urban areas and free from pollution, it provides the ideal environment for cultivating this tea. The farm’s unique terroir, characterised by its subtropical climate, fertile soil, and optimal altitude, allows the Butterfly Pea plants to develop their signature deep blue hue and rich aroma. The harvest season runs from July to November, during which the delicate Butterfly Pea buds are carefully hand-picked. As well as supporting environmental sustainability, the hand-harvesting process preserves the tea's quality and ensures that each plant is treated with great care and respect.

Test results

We find it very important that our teas are pure and produced in a way that respects the environment. For this reason, each one of our teas is tested for pesticide residues by an independent laboratory, the results of which can be found here. Some of our teas are also tested for specific nutritional compounds, in which case the test results are also published here.
