The tea farm is a nationally renowned pioneer of natural tea cultivation without the use of artificial pesticides or fertilisers and has won several awards for its teas. For over twenty years the farm has been committed to protecting regional, old-growth tea plants.

White Tea

White tea is the least processed type of tea, with the lowest degree of oxidation. It is traditionally withered outdoors in a careful, gradual process. Markers of quality include a high proportion of buds and a lightly coloured cup. Elegant and delicate, white teas tend to be subtly sweet with nuances of vanilla and a velvety texture.

Baimudan, also known as Pai Mu Tan or White Peony, is one of several types of white tea. Made up of buds and the first two leaves, Baimudan is similar in character to much prized, bud-only Silver Needle white tea but with more body and aroma.

All our teas are sourced directly from the farmer and, with a few exceptions, are certified organic or come from pesticide-free farms. Each batch of tea for every harvest is tested for pesticides and other pollutants in an independent German lab to ensure they meet our strict quality standards as well as HACCP food safety requirements.

Cultivation & Processing

Still largely considered an insider tip, white tea from the Zheng He region of Fujian province has enjoyed an excellent reputation amongst locals and connoisseurs for some time. Due to the excellent quality, many consider Zheng He white teas to be on a par with those from neighbouring Fuding – the much sought-after origin terroir of white tea.

Fringed by mountains and flowing rivers, far away from large cities, Zheng He offers optimal conditions for producing first-class tea. The altitude varies between 800m to 1000m, making it slightly higher than Fuding, resulting in slightly less sunlight and more rain, which means the tea plants grow a little slower while absorbing more minerals from the fertile soil. The tea plants are therefore very rich in nutrients and develop a particularly intense flavour.

The tea farm itself is sheltered from the wind by the regional Wuyi Mountains and is not far Sonxi: a town that boasts more than a millennium of tea history. No pesticides are used to cultivate the plants and local cows are regularly led into the fields to loosen and enrich the soil.

The tea is made from first harvest leaves and buds hand-plucked between late March and early April. Due to the unpredictable weather, these are then carefully withered alternately indoors and outdoors on bamboo troughs in a process known as mixed withering or fushi weidiao (複式萎凋). This takes place over several days until the tea has reached the desired level of maturity. Finally, any remaining moisture is removed through gentle oven drying.

Preparation

Brewing Guide

Take one square, break in half, and steep in 250–300ml of water at 85–90°C for 2–3 minutes.

To prepare traditionally in a small teapot or Gaiwan, take one square, break in half, steep in 100–200ml water at 90–95°C for one minute.

Suitable for several infusions, increase the steep time with each subsequent brew.

Recommended Teapot

Prepare traditionally in a small ceramic teapot or Gaiwan; alternatively steep in a glass teapot with ample room for the leaves to unfurl.

Packaging & Storage

Each square is wrapped in traditional, breathable rice paper inside a high-quality, airtight, resealable standing zipper pouch with nine protective layers. After opening, press out as much air as possible when snapping shut. Alternatively place the squares in a stylish tea caddy.
