Kinezuka Tea Garden

The Kinezuka Tea Garden is renowned for its exceptionally stringent adherence to natural and organic cultivation methods. These include the avoidance even of pesticides which are permitted according to the Japanese JAS organic standards. While we source our teas directly from Mr. Kinezuka's farm, the region boasts other reputable JAS organic teas, in part as a result of the cooperative that Mr. Kinezuka founded in 1976 with other tea farmers from the Fujieda region. This cooperative is committed to the cultivation of the finest organic teas, and there are currently at least 26 farms in Fujieda that have joined. These farmers not only work together to improve their organic cultivation methods, but to further an integrated regional organic system under the name "Human, Agriculture, Nature".

This excellent 88 Ya No Shincha is the undisputed crowning jewel of the Kinezuka Tea Garden. Traditionally harvested on the 88th night after the spring equinox – a harvest which, on this specific night, has long been regarded as producing teas considered elixirs of longevity and protectors of good health – 88 Ya No Shincha tea is often presented as a fortune-bringing gift. The exceptionally strict, self-imposed organic standards at the Kinezuka Tea Garden are reflected in the intense richness of umami, catechins and caffeine in this tea, which blend together for an elegant and robust flavour. Highly aromatic, its room-filling flavour bouquet is reminiscent of a cool summer breeze, infused with powerful vegetal notes of fresh green meadow herbs such as wild nettle.

Due to the exceptionally warm weather in March in Japan, the 2024 harvest was plucked a few days before the traditional 88th night. This way, the Kinezuka family ensures the highest quality of the tea, which we were able to fully convince ourselves of during the tasting. This year, the tea scored a full 100/100 points in our evaluation criteria "Noble bitterness", "Harmony" and "Elegance", which predestines this tea as the absolute pinnacle of our Shincha & Sencha assortment. Additionally, this year's tea needles are of outstanding beauty.

Shincha 2024

Shincha, which translates from Japanese as "new tea", marks the start of the tea season in Japan and is eagerly awaited every year. For the Japanese tea world, it is considered the highest quality tea of the current season and embodies the perfect freshness of Japanese green teas thanks to its extensive aroma spectrum. Only the tea buds and young leaves, the first shoots of spring, are harvested. Their wealth of valuable nutrients is decisive for the unmistakable freshness and strength that makes shincha so exceptional. Small harvest quantities and high demand make this special first harvest a highly limited, seasonal tea.

Laboratory Tests

We go to great lengths to identify the finest organic tea farms across the world’s most celebrated terroirs. All our teas are sourced directly from the farmer and, with a few exceptions, are certified organic or come from pesticide-free farms. Each batch of tea for every harvest is tested for pesticides and other pollutants in an independent German lab to ensure they meet our strict quality standards as well as HACCP food safety requirements. Likewise, all the regions of Japan from which we source our teas are tested for radioactivity for every harvest.

Cultivation & Processing

The tea farm is located in the idyllic mountains above Fujieda, near the town of Nakayama. The farm is known for its exemplary and exceptionally strict organic standards. In addition to particularly natural and robust teas including sencha, kabusecha, bancha and hojicha, this farm also produces excellent organic rice, fruits and vegetables. The farm is also known for its mikan (Japanese mandarins).

Single Origin

This tea is sourced exclusively from the above-mentioned tea plantation in Fujieda and is purchased directly from the farmer.

Brewing Guide

3 heaped teaspoons per 100–300ml water (60°C). Steep for 2 minutes.

Tip: For an especially powerful infusion which unfolds the full potential of this tea, we recommend adding 1 additional heaped teaspoon to the above recommendation and ensuring the water is poured at the latter end of the range provided.

Suitable for up to 6 infusions:

1.   55°C, 50 sec.

2.   65°C, 20 sec.

3.   60°C, 25 sec.

4.   60°C, 20 sec.

5.   60°C, 10 sec.

6.   60°C, 10 sec.

Packaging

High-quality, airtight, resealable standing zipper pouch with 9 protective layers to preserve flavour and protect against oxidation and contamination. The tea is vacuum packaged according to the highest standards in Japan, with a small quantity of nitrogen added to the package to protect against oxidation.

Recommended Teapot

The special clay and oxidation firing of a red Tokoname kyusu with a fine ceramic strainer brings out the precious bitterness beautifully, making it an ideal teapot for this sencha. Alternatively, a reduction-fired black Tokoname kyusu is a great all-rounder for every green tea.

Recommended Storage

A high-quality tea caddy made of cherry bark (solid wood, kabazaiku chazutsu) is ideal, though any airtight tea caddy with internal coating will suffice.

The purity of our formulas is important to us. This is why we have both our raw ingredients as well as our finished products extensively tested by independent laboratories to confirm purity and active ingredient content.
